Recipe: Quick and Easy Pasta

Well once again....I wanted to post some pictures but it is not loading. I'm snowed in so that means no going down to the church to post any. You'll just have to trust me. 
Yesterday I headed off to the grocery store around 3:30 (good thing too since this morning it began to snow and it looks as if I'm not going anywhere). By the time I got home it was 6:30. Hubby and the girls were at the church but I knew they 'd be hungry when they arrived home at 8:15. I keep thinking of using my crockpot more, but always manage to forget. I still needed to unload all the groceries since the girls were going to be making peanut butter balls with a friend when they got home. I needed to make something that would be quick and easy. Keep in mind that I'm not very good at "Making up" recipes but I just didn't have time to "look one up". 
I found some bowtie pasta I had. I took out about 5 chicken tenders, thawed them quickly in the micro and then diced and cooked them in a skillet with some garlic. To that I added a zucchini that I had cubed. Removing that from the pan I combined a can of diced tomatoes, a small can of tomato paste and about 1/4 c. whipping cream and a scooch of water. Once that was stirred in, I added the chicken and zucchini back in along with the pasta. The final touch....shredded Parmesan cheese. Oh, I also added parsley, a touch of salt and Italian seasoning.
It turned out so good and I think it really only took about 30 minutes to make. A winner in all of our books.
The grocery stores were crowded last night as people anticipated the snow and freezing rain that was being predicted. I still need to grocery shop for Christmas Eve and Day, not to mention finish up some Christmas shopping. I believe it will a last minute thing. Oh, well. 
The snow continues to fall. It is beautiful outside and I would venture to guess that we have a good couple inches and no sign of it letting up. Kat is so upset because that means we've had to cancel youth group and tonight was our Christmas Party. The snow also threatens her birthday party which is already over a month late. She is a young lady who doesn't really like change and especially doesn't like last minute changes or cancellations. Nan and I can roll with the punches, though I like notice of change instead of spontaneous change. Poor girl. Maybe she'll play in it later and that will take her mind off things.
I don't mind being snowed in. I have food in the house now, so we can bake or do whatever we want. I think the girls and I will make some cinnamon ornaments and right now Nan is making her favorite Jam Filled Muffins from Gooseberry Patch Kids cookbook.

  1. Sounds lovely. I have a little tip you might try with this recipe. Boil the pasta using chicken broth instead of water. It adds a wonderful flavor to it.

  2. I love quick and easy recipes that taste good and turn out to be family favorites. You've got to take a look at Cooking With Trader Joe's. Delicious, quick and easy gourmet meals -- couldn't be simpler and couldn't taste better. I have been taking my cookbook with me when I shop, so I can make sure I get all the ingredients I need. I can't tell you how many times I've been stopped and asked about the book. (I think I've probably sold TJ's a bunch of them, too!) Oh, and the recipes are nice and healthy, too.

  3. Liz...I was sad you didn't have a blog I could go to. I love Trader Joes and am going to look into this cookbook. They have such yummy stuff. I love their little potatoes, ketchup, yogurt, and lots more.
