Jam Filled Muffins and More...
I originally posted this in 2008, boy does Nan look young. I made these muffins this morning for the girls, mainly because I am so low on food and they wanted something yummy for breakfast and these ingredients are always available. We got the recipe out of a Gooseberry Patch kids cookbook.
These muffins are super easy for even the youngest baker to try. Nan was maybe 8 when she first made them.
So enjoy an old post and a great recipe. We are still putting the roof on our house and the internet is still down. Probably another two weeks. It's definitely not convenient that's for sure. I'll post again soon showing our progress. Kat has her 15th birthday tomorrow (wow...where does time go).

Jam Surprise Muffins
2 c. all-purpose flour
3 Tbs. sugar
1 Tbs. baking powder
1/2 tsp. salt
3/4 c. butter, softened
1 egg
1 c. milk
non-stick vegetable spray
1/2 c. your favorite jam
Combine flour, sugar, baking powder, and salt in a mixing bowl. Blend in butter with a fork until mixture is crumbly. Form a well in the center. Whisk together egg and milk and then pour into the well in the dry ingredients. Stir just until ingredients are moistened. batter will be lumpy. Fill sprayed and floured muffin tins about 1/3 full. Spoon one tablespoon of jam on top of batter and cover with enough batter to fill cups 2/3 full. Bake at 425 degrees for 20 to 25 minutes.
