Menu Plan Monday

Well I ended up not cooking much last week due to the heat. We either just ate cereal, or went out to eat one night. I did BBQ Salmon one night and it turned out amazing. This is probably by far my favorite recipe, though I also like doing a mixture of mayonnaise, dill weed and cheddar cheese. Bake the salmon till almost done, then top with mayo mixture. Cook till cheese is melted. I also found a thin 1 1/2" deep baking pan that I lined with foil. On it I put sliced potatoes, diced onion, green beans, yellow squash, zucchini and mushrooms. Tossed them with olive oil, garlic powder, salt, pepper and parsley. Tossed and covered with foil and baked on the grill as well. That was soooo good! This week we are only home Monday-Wednesday and then we will be out of town till next Monday but still cooking our own meals. So here's what's on the table.

The Three nights we're home:

BBQ Chicken, salad and baked potatoes Homemade pizza (never got to it last week) Either a whatever night or salmon....we'll see how it goes!

While we're on Vacation:

Breakfasts: (we do larger breakfasts when we're gone) Biscuits and sausage gravy...I'll post this easy and yummy recipe later Waffles with bacon and sausage Breakfast burritos...I have never made these so if anyone has any great tips, I'd appreciate it! Muffins/cereal/yogurt

Dinners: Hamburgers, chips, potato Salad BBQ chicken, corn on the cob and potatoes Pizza Tacos with all the fixings.

Lunches are usually just sandwiches, salads, bagels or leftovers.

  2. Sounds like a yummy week!

    When we do breakfast burritos, we do them mexican style. We brown the sausage and then add taco seasoning. We mix that together with scrambled eggs, and sometimes even mix in some cooked grits. Stir in some cheese and put them on the tortillas, then top with a little salsa. Yum!

    But you can do just about anything. You can put hashbrown potatoes in them. You could saute some onion and bell pepper and throw that in. Or you can just do simple and stick with the basics, like sausage, eggs and cheese. The possibilities are endless!
