Menu Plan Monday

How cool...Org. junkie is having a giveaway for those who participate in Menu Plan Monday. It's all about teaching our kids to eat healthier. I don't know about you, but that is a top priority on our list with our girls. Last week I was able to make a few of the things on my menu. The chicken Paprikash was a hit. In fact the whole pan was gone...no leftovers. We had a friend over who is Romanian and he loved it. In talking to another Romanian friend it was interesting to find out how many European countries serve similar meals but call them something different or add some different ingredient that sets it apart for their country. My MIL makes what she calls Bratzille (spelling?) which is very similar to the Italian cookie pizzelle. My MIL rolls hers, where we always left them flat. Anyways, that has always interested me. On to my menu. Once again we'll see how it goes. I think it'll be easier when I'm in my own house and watching my niece there as well.
Chicken Soup and biscuits
Chicken Pot Pie with salad
BBQ chicken with corn on the cob and baked potatoes
Grilled chicken with salad and maybe some baked beans
Turkey and veggie soup
Tuna Casserole with veggies
Grilled Salmon with zucchini and rice
Stir fry a few times
Enchiladas with rice, beans and salad

There ya have it! We'll see how it goes. Our week is starting out in the 90's and then working it's way down to the 60's. So I think I'll get my BBQing out of the way early...if I remember to fill my propane tank!

  1. Chicken pot pie is so yummy! It can really warm your tummy!

    I am already in the 60's working down to 40's so the chicken soup and biscuits is calling my name!
