Menu Plan Monday

Well, what a busy week last week, and not much on the menu got made...well, I take that back. I think three of the meals were made. I'm not a fan of eating late at night and so if we are not going to be home around dinner time, then we will just have cereal, salad, a quick sandwich, or something like that. Not a large heavy meal. Yesterday was church, and I try to either have something in the crockpot, or a quick meal to fix so the family isn't waiting too long. I made the salmon I had on my menu, but instead of roasted potatoes, I did baked potatoes and we had broccoli. I tweaked Sandy's salmon recipe to fit what I had in the house. I used the melted butter and lemon (which my youngest apparently isn't fond of lemon, but she ate it), then I seasoned it with garlic powder, pepper, a teeny bit of season salt (we try to avoid added salt), dill and paprika. Then in a bowl I combined a bit of mayo, a bit of Dijon mustard, some Parmesan cheese and some cheddar cheese. Stirred it up, and at the end of the salmons cooking time I spread that on each fillet. Cooked until the cheese melted, and may started to bubble. It was yummy, and the whole thing was ready in about 30 minutes. I also cut up some oranges to eat while we waited. This week, I think we will try:
Meatloaf, mashed potatoes, and a veggie...probably beans
Soup with salad and rolls
Chicken chimichangas with rice and beans
Homemade pizza
BBQ Chicken, potatoes, veggie
I realize that's only 5 meals out of 7 days, but I honestly don't know what the rest of the week holds and I'll just come up with something.
I'm also still in the process of retyping my recipes. They look really neat and I can't wait to print them and put them in a binder.
