Slow Cooking Thursday: Creamy Italian Crockpot Chicken
I thought I'd join into Slow Cooking Thursday today. I admit, I'm not the best at using my crockpot, mainly because I just forget to get it ready and turn it on soon enough. But when I do use it, I love it.

My recipe is for Creamy Italian Crockpot Chicken. I found this awhile back on the Spark People website and we have really enjoyed it.
Ingredients:
2 lbs. chicken breast, boneless, skinless
1/4 c. butter melted
1 c. low fat cream cheese with chives
1 can cream of mushroom soup (or cream of chicken would work)
1 pkg. Italian salad dressing mix (0.7oz)
1/2 c. water
Directions:
1) Cut chicken into strips and put in crockpot.
2) In a bowl, combine remaining ingredients and stir until blended.
3) Pour over chicken.
4) Cook on low for 6-8 hours
5) Serve over pasta or rice
