Slow Cooking Thursday: Creamy Italian Crockpot Chicken

I thought I'd join into Slow Cooking Thursday today. I admit, I'm not the best at using my crockpot, mainly because I just forget to get it ready and turn it on soon enough. But when I do use it, I love it.
Sandra, over at Diary of a Stay at Home Mom and Full Bellies hosts this event. Stop by and visit her blogs. They are wonderful and will soon become favorites of yours.
My recipe is for Creamy Italian Crockpot Chicken. I found this awhile back on the Spark People website and we have really enjoyed it.
2 lbs. chicken breast, boneless, skinless
1/4 c. butter melted
1 c. low fat cream cheese with chives
1 can cream of mushroom soup (or cream of chicken would work)
1 pkg. Italian salad dressing mix (0.7oz)
1/2 c. water
1) Cut chicken into strips and put in crockpot.
2) In a bowl, combine remaining ingredients and stir until blended.
3) Pour over chicken.
4) Cook on low for 6-8 hours
5) Serve over pasta or rice
Number of servings: 6
With Joy UNquenchable,

  1. Thanks for sharing this - it sounds really good. I love things like this served over rice, so I'll be trying it!

  2. Great recipe, I really shouldn't be looking at all this stuff before lunch LOL

  3. Chicken is my favorite (just behind pizza) and this looks really yummy. I think I'll try it next week. Thanks!!

  4. I make this often, just minus the butter. It's a yummy dish, isn't it!?

  5. This sounds delish!
I love creamy chicken dishes. Thank you for this one. :)
