BKD Cookbook Club
It's time again for Jo Tracey's BKD (Brookford Kitchen Diaries) Cookbook Club. I've followed Jo for awhile and have read several of her books, including one of her most recent which features a group of ladies who have a cookbook club. If you haven't read any of Jo's books, you should.
This month Jo is back from a trip overseas and she's asked us to share something along the lines of a lighter, healthier dish, perhaps some type of salad.
I admit, I'm not ready. I was kind of ready, but then I procrastinated, and when I got home today I was like, "oh no, it's BKD cookbook day and I don't have anything prepared or ingredients". Sooooo I could either not post, or I could just wing it. So I'm winging it. I also just realized that the salad I was going to share, I shared in January of last year....I'll still share an image but I'm also just going to share a recipe that my mom used to make and years ago I submitted it to a cooking magazine called Cooking for Two, and it was published, so does that count as a cookbook? I'll do better next month.
This is such a great recipe, so even though I shared it here last January, it's worth sharing again. It's hearty and you could serve it with some chicken.
This is the magazine my recip was in. Their picture doesn't look as hearty as mine..haha, but this is such a fast, easy "salad" of sorts perfect for those of you down under who are experiencing summer or having last minute company.
It's literally just green beans, tomatoes, hard boiled eggs and an Italian vinaigrette. You could add onion if you want.
