BKD Cookbook Club...Oldies but Goodies
It's time again for Jo Tracey's BKD (Brookford Kitchen Diaries) Cookbook Club. I've followed Jo for awhile and have read several of her books, including one of her most recent which features a group of ladies who have a cookbook club. If you haven't read any of Jo's books, you should.
This month we're throwing it back to oldie but goodie cookbooks. I decided to pull out a cookbook I actually put together as a fundraiser for our youth group. I still make things from it quite often. We published it in 1996. Some of the contributors are no longer with us (including my mom), which just make the recipes more special. It was fun putting this together. I've since wanted to put something together for my girls and my nieces and nephew. I'm still figuring out how I want to do that without breaking the bank. This book was filled with recipe, tips, hints, etc.
For this months challenge I made two recipes. One that my youngest daughter makes often and one that was my moms recipe and I remember loving it.

I even have other recipes tucked in with it.
For my first recipe I made these chocolate chip cookies. I cut the recipe in half because they make a lot. For whatever reason, when my youngest daughter makes them, they turn out perfectly. They are still good when I make them, but whatever she does, I love them even more.
The second recipe is this deep dish biscuit pizza. It is so good and so easy! It is similar to a bubble pizza I've made where you cut the biscuits in quarters, place in a greased casserole dish, top with ground beef mixed with pizza sauce and add mozzarella to the top and bake.
For this recipe I used fresh mushrooms. I want to try it by finding a homemade biscuit recipe that might work. I tried to find some organic biscuits but none of my stores carried them.
I used a deep pie pan to spread the biscuits. It took me two cans to fill it nicely. I didn't want the crust to be too thin.
Top with all the toppings, then bake.
I also added arugula to the top towards the end since I had some that needed to be used up. I loved that addition and will add more next time.

I love this! I especially love the helpful hints, which gave me a few giggles. I had to think for a minute about biscuits and then I realised you meant what we call scones and all was understood. I know what you mean though about different people making the same thing. I make my mum's Anzac biscuits (cookies) but they taste different to hers. Grant prefers hers. Thanks for linking up.

DeleteI have a few handwritten recipes that my mum gave me many years ago. So nostalgic, so wonderful to have a tiny bit of her in my hands.

I love having my family's recipes. I came across one and it was for meatballs but it was obviously meant for a large group of people because the ingredient amounts were so large.
