BKD Cookbook Club...Spotlight on Greece



It's time again for  Jo Tracey's BKD (Brookford Kitchen Diaries) Cookbook Club. I've followed Jo for awhile and have read several of her books, including one of her most recent which features a group of ladies who have a cookbook club. If you haven't read any of Jo's books, you should.


This month we're traveling to island of Greece. I found two great books, and as I type this, I'm still making a few recipes and it's post day. Both books would be worth adding to your collection. I have several recipes I took pictures of so I can make them later.


The two books I chose were Greekish by Georgina Hayden and Lemon, Love and Olive Oil by Mina Stone. Let's jump into them both. 

Did I favor one over the other? No. They are both beautifully done with recipes that look amazing. Both authors have greek heritage and I enjoyed their stories. I would love to visit Greece someday. I loved that the ingredients are ones I can easily find. There were a few recipes that called for a certain cheese, halloumi, and I thought "there's no way I'll find that", so I ignored recipes that called for it. While grocery shopping, what did I find? Halloumi. Ha! It was fun reading about the authors, and how their lives shaped their views and love for food. 


Each book had beautiful photos throughout them. 

From the first cookbook, I made the Yogurt flatbread with pulled chicken. I was a bit hesitant as it used cinnamon but I just added a little less. The flavors were really good. The flatbreads took no time at all. 







I probably made them a little too thick, though I thought I had them thin enough. Their flavor was really good though. 


This recipe called for you to spatchcock your chicken. I suppose I could've just bought chicken pieces, or chicken already shredded, but I wanted the full experience. It was easier than I thought (I had never done this to a chicken before). The flavors were very good despite my hesitancy about the cinnamon. 




I made a homemad tzatziki sauce to have with it. I also wished I had some hummus but thought about that too late. Topped with red onion, cucumber, tomato and sliced green olives. 

Quite a few years ago we had dinner at a friends house and she made greek chicken sandwiches with a yummy greek salad to go on it. It's a favorite that we make often..and it is on flatbread. You can find it here. I need to update that post. 





The photos in this cookbook were so whimsical. The author is also the co-owner of a restaurant.

I made the greek donuts, and oh boy, were they yummy. They are basically like what the Italians make and call Pizza Fritte. My granddaughter liked them too. I just sprinkled powdered sugar on hers. 








This recipe was good but was lacking something. After it was done, I thought maybe I should've added some parmesan cheese either to the pesto or just on top of the dish and maybe some fresh basil. 




I had some leftover homemade noodles that I had let dry and so I made those. Yum.


There are still a few recipes I think I'd try, like, Pastitsio, and latkes. 

See you next month when we explore TV/Celebrity Chef recipe books...ooh I can't wait. I already know what books I'm going to shoot for, AND they're ones I actually own.

  1. That pulled chicken... be still my beating heart. I love the sound of the lemon, almond, pesto pasta combo too. Parmesan or additional basil might have been the extra seasoning you were after. Thanks for linking up and I can't wait for your choice of celebrity chef.
