Holiday One Pan Hash


Do you ever feel like you have to come up with a large production for Holiday meals? I think as women, we often put way too much pressure on ourselves and end up stressed and dreading the moments that could and should bring us pure joy! 

The other day I put together a hash that turned out wonderful. It was complete, filled with veggies, meat, potatoes and eggs and satisfied us easily. So if you have a breakfast to make for a group, or simply your own small family this would be perfect. Make in a large non-stick skillet or for a larger group a deeper large electric pan.

Your amounts are going to vary according to how many people you have, this was for 3-4 people. The rule of thumb is 1 egg per person (with 1 Tbs. liquid..water or milk, per egg) and 1 potato per person.
Ingredients:

2 Tbs. oil
Chopped onion (your desired amount)
1 Pkg. Kielbasa, quartered and chopped
1 red pepper, diced
4 potatoes, peeled and diced
1 zucchini, diced
mushrooms, chopped, optional
garlic powder
onion powder
salt
pepper
cayenne pepper
5 eggs
5 tbs. milk

Instructions:

1. In a non-stick pan, heat oil. Add onion and kielbasa. Cook on medium high about 5 minutes. Add potatoes and red pepper. Cook until potatoes begin to become fork tender. Add seasonings to taste. Add zucchini.

2. In a separate bowl, combine eggs and liquid. Mix. Pour over top of potato mixture. Reduce heat to medium. Let sit for a few minutes to begin setting up. Every few minutes fold mixture over each other until eggs are cooked through. 

3. Serve immediately.
