Secret Recipe Club February Reveal
It's reveal day for Group D for the Secret Recipe Club. I'm excited. I always am. My assignment this month is from the blog Table for 7. Yep, you read right..7. This mama is the mama to 6 kiddos. Their youngest daughter passed away at just 31 days old in the summer of last year. Please take time to read her story. It is a beautiful one! This mama is simply amazing!
As I browsed through her many yummy sounding recipes, I marked 6 (I made a secret board on Pinterest to help me easily access ones I want to try). Oh, the decision was hard. Finally I settled on two and I'm sure I'll try the other four at some point because they sounded so good. I mean, come on...CrockPot lava cake, Honey-Garlic Chicken, Peanut Butter S'mores bars and Mini Meltaway Cookies. I settled on making her Baked Pierogi Casserole and Ranch Dressing. I've been wanting to try making ranch dressing and it seemed so effortless that I went ahead and made it. My youngest (well, okay, all of us girls in the house) love Pierogis, so that one was kind of a no-brainer as well.
We'll start with the Ranch Dressing since it was the easiest...actually they were both really easy.
Ingredients:
3/4 c. mayonnaise
3/4 c. sour cream (I used greek yogurt)
1 Tbs. canola oil (I actually forgot this)
1 Tbs. lemon juice
1 c. buttermilk
1 Tbs. chives
1 Tbs. Parsley
garlic
salt and pepper
Mix all ingredients in a food processor or blender. Mix till smooth. Chill before serving.
I wasn't sure if the seasonings were fresh or dried. I used dried since that's what I had. I didn't use fresh garlic but added garlic powder. I halved the recipe and it made a decent amount so if you don't think you'll use it all, may make half of the above recipe.
It was very yummy! As it set in the fridge it became thicker. I was pleased with the flavor but might add a bit more seasoning next time. I forgot all about the oil so I don't know if that makes a difference or not.
Now for the second recipe. We love Pierogi's. I've made them from scratch once and they were yummy but I usually by the brand Mama T's. They are really good with great flavor.
Ingredients:
1 16oz. pkg. Frozen Pierogis
2-3 slices bacon cooked and crumbled
1/3 c. cream cheese
1/2 c. chicken broth
1/4-1/2 shredded cheddar cheese
chopped green onions (darn, I forgot these)
Preheat oven to 400 degrees. Spray a 13 X 9 pan with cooking spray or use butter. I think you can get away with a bit smaller pan. It seemed a little big to me.
Place pierogi in pan. In a medium saucepan heat broth and cream cheese, stirring as you go till cream cheese is melted and mixture is smooth. Pour over Pierogi's. Sprinkle with grated cheese and bake for 20-25 minutes. Mine didn't cook quite that long so be sure to check periodically. Remove from oven and sprinkle with bacon and green onions. Serve immediately.
These were really good. They were rich but very good! A great side dish or for us, we ate them for lunch by themselves. I would totally make these again, maybe making a little more "sauce" for them, and of course, not forgetting the green onions. I even thought of adding some sautéed onion to the dish before popping it in the oven.

ReplyDeleteWe always loved them growing up as my dads side of the family was slavik/Polish. I find the Mrs. T brand is the best store bought ones I've had.

DeleteThey were really good but sure time consuming. I've also made the filling and then filled shell pasta with it...tastes almost the same.

DeleteI have a box of pierogis in my freezer in need of eating - having never made them before I've wondered what the best way to fix them would be. This looks awesome! :)
ReplyDeletethis way is great but I also will just heat up some butter and olive oil in a pan and cook them on top of the stove till tender and heated through. You could also boil them but I like the flavor of doing them on the stove. Sometimes I'll add sauteed mushroom and onion to it as well.
