SRC: Easy Cheesy Zucchini Bake
Guess what time it is? Oh yah....it's Secret Recipe Club time...I look forward to this time every month. There is a fun challenge to being a part of this group. Being assigned a blog, finding a recipe to make and blog about it. Sometimes it's hard to choose a recipe. Sometimes it's hard to find one that I think we'll all like, but I've yet to have one BoMb...yay me!
This month I was assigned Emily's blog, Life on Food. Check out her About Me Page...it's done in such a fun way. This girl has been all over the place, to places that I would love to go to. She has a travel page. She loves cookbooks...me too. I bookmarked a few recipes, but ultimately chose her Easy Cheesy Zucchini Bake.
I chose it for a few reasons; #1 There is a LOT of zucchini around right now. #2 I LOVE zucchini, and #3 I LOVE cheese!
I was not disappointed. The herbs make it pop and how can you go wrong with all that cheeziness! Yes, go make it...very soon!
Easy Cheesy Zucchini Bake
from Life on Food
Ingredients:
2 zucchini, cut in slices or half moons
2 yellow squash, cut in slices or half moons
2-4 Tbs. fresh, chopped basil or less depending on how much flavor you want..I probably didn't even use a tablespoon
2 Tbs. green onions, sliced
1/2 tsp. dried thyme
3/4 tsp. garlic powder
1/2 c. + 1/2 c. white cheese..I used a 6 cheese Italian blend.
1/2 c. fresh parmesan cheese
salt and pepper to taste
Preheat oven to 350. Spray an 8 x 8 or equivalent pan. In a bowl combine first 6 ingredients and 1/2 c. cheese and 1/4 c. parmesan cheese. Combine well. Pour into pan and bake for 35 minutes. Remove from oven, sprinkle remaining cheese on top and bake for another 10 minutes or until cheese is bubbly and zucchini is done.
Head over to Emily's site if you want more step by step detailed recipe. But this was wonderful. I was afraid the zucchini would get too soft, but it didn't. It was perfect.

What a great side dish, oh who am I kidding, I could make a meal on this! I too love zucchini and I LOVE cheese!

I am so glad that you liked it...I was skeptical too at first. This ended up being one of my favorite uses of zucchini this year. I am pretty sure it will be an annual thing from now on.
