Recipe: Blueberry Chia Seed Jam

I have seen a few recipes here and there for making jam using Chia seeds. I have only recently discovered Chia Seeds, well for uses other than in Chia Pets...haha...it is also, unbeknownst to me, to be an edible seed, with many health benefits. Just google it and a myriad of websites will pop up. As with anything, make sure you do your research to make sure it is something you want to incorporate in to your diet. I really only use them in smoothies only because they can be a bit spendy. However I had watched a video on youtube awhile back of a gal making jam with chia seeds, thus getting away from heavy sweeteners, pectin and cooking the fruit. This literally takes minutes and you can make just a small amount or a jar....I wouldn't make more than a jar at a time...I'm not sure how long it will last in the fridge. One site said up to a week. Another video I watched put the fruit and chia seeds in the blender after they had soaked.

Here is what you need and what I did:

1 c. blueberries
2 Tbs. chia seeds
1 Tbs. water
Honey (or other sweetener)

In a bowl mash berries. I ran my blueberries through the blender since their skin doesn't mash well. Add Chia seeds and water.
Stir till incorporated. Add sweetener...I just drizzled the honey over it and tasted to see if it was how I wanted it. Stir again.
Let sit 15 minutes, or put right into a jar and refrigerate. Eat when it is to your desired consistency.
Yum!

  1. Such a simple wonderful recipe. I too enjoy chic seeds (as well as salba seeds...they are very similar); they are great ads to smoothies since they thicken them nicely.
