SRC Recipe Reveal: Guacamole

It's that time again....what time? That time of the month when I partake in a fun blog event called The Secret Recipe Club. What is that? Once a month a group of bloggers are assigned a "secret" blog. After being assigned this blog, we drop everything we are doing and spend hours pouring over tons of amazing recipes, trying to choose just ONE to feature on our "reveal day"! It is so much fun!!!

This month I was assigned the blog "I Am a Honey Bee". The blog author Nicole has a blog filled with yummy recipes. Her "about" page is awesome. I learned some fun things about her.

I had a hard time choosing and recipe and finally nailed it down to two. I decided to ask my family which they would like to try...I was secretly hoping they'd choose the Mexicasian fish tacos. Guess what? They didn't. I love fish tacos, but I think I might be the only one in my family that does. What did they choose? They chose Guacamole. That's okay. I love guacamole too.

I have never made a chunky guacamole. I usually make the creamy kind and honestly I can eat a whole bowl all by myself. Yep, I love it that much, so the challenge to make it chunky seemed like a good one!

The ingredients were simple:

  • 4 avocado
  • 1 dry pint of grape tomatoes, diced
  • 1/2 a red onion, chopped
  • small handful of cilantro, chopped
  • 1/2 a jalapeno, minced
  • 1 1/2 limes
  • salt and pepper

In a bowl, combine, tomatoes, onion, cilantro and jalapeno.

Halve the avocados, remove seeds, score avocado with a knife, scoop out avocado with a large spoon and add to tomato mixture. While mixing, squeeze the lime over the guacamole. Season with salt and pepper.

Here is what I did differently.

  • I halved the recipe because I didn't need alot.
  • I used a roma tomato that I diced in small pieces.
  • I left out the jalapeno, only because we don't really like spicy.
  • I also added garlic powder.

I cut up some tortillas and baked them in the oven. Kat and I enjoyed some of this yummy, chunky guacamole for lunch. I was nice enough to save some for my hubby later!
The verdict? It was very, very good! But how could it not be, it's made with avocados! Head over to Nicole's blog and show her some love. Also, check out the recipes below for more great SRC reveals!
