Recipe: A Simple Cabbage Salad

Last night I made my youngest daughter's favorite meal, well, one of them. BBQ chicken legs (I had found a great deal on free range, organic legs at Chucks Produce and Street Market), mashed potatoes and gravy, broccoli and a Cabbage Salad that was super yummy!


I didn't have time to take any pictures (sorry) but I'll share the recipe anyways and you can "imagine" what it looks like as you're making it. There are no specific ingredient amounts, I did it all to taste.
Salad Ingredients:


Purple Cabbage, finely shredded
Carrots, grated or julienned
apple, grated


Combine all ingredients in a bowl. You could also add some red onion. Use whatever amounts you want.


Dressing Ingredients: 


canola oil
white vinegar
yellow mustard
onion
garlic powder
salt
pepper
poppy seeds
sugar
These are the ingredients in one of my favorite salad dressings, so if you wanted to follow the recipe and use some for this salad and the rest store in the fridge for another day, you can do that. Because I was only going to be using a very small amount, I combined the ingredients in my Vita-Mix until I was satisfied with the flavor. Pour over salad and chill till ready to serve. It's light, crunchy and just plain yummy!!! I'm posting a picture from another "slaw" recipe I made just to give an idea of how shredded the cabbage should be.

  1. I lov a good slaw dressing without the mayo! The one you have sounds just lovely. Don't you think vinegar slaw is so much more versatile? I make what they call "Amish" slaw which is similar, and tastes good as well. We love to have it with pinto beans or bbq sandwiches.
