Grilled Cheese on a Snowy Day!!

Finally, it is snowing snowed here in my section of the NorthWest. It started Saturday night. Went away Sunday and returned on Monday and Tuesday. All in all we received 7-8" at our house. We are a few hundred feet above sea level. Our town itself is 25' above sea level. I have loved having snow...we just don't get it often enough. In 2011 I don't think we saw more than an inch. In 2008 we received 2'...I was in my glory that year.

So, my girls, while the public schools have been closed the last two days, the mean mommy (me) made them do school. However they were done by noon both days and went and played in the snow. Hubby was able to make it to the office, which left me at home...alone. It seems as they get older they just love to be with their friends. 


So, this afternoon, they again, left with friends to go sledding...I decided to try a new sandwich that I found on the blog, Closet Cooking. I LOVE grilled sandwiches so when I spy a new one, I'm game for giving it a try. The blog's author, Kevin, shares his love for tasty food. I found the recipe for his Mushroom Melt on my newest love, Pinterest. I had all the needed ingredients, adjusting a few things since I was using what I had on hand. In a nutshell I sautéed onion and then garlic and some thyme in a mixture of butter and olive oil, then added the mushrooms...his recipe called for cremini but I just had button mushrooms. Sautee till golden brown and caramelized. I then added just a splash of white wine..maybe a tablespoon. I used some shredded gruyere, shredded parmesan cheese and a slice of provolone. When the mushrooms were done, I removed it from heat to cool slightly, then stirred the grated cheese in as well as a bit of salt and pepper. I also added some fresh spinach to it. I piled all that yummy goodness between two buttered slices of Daves Killer bread and then grilled it like I would any sandwich. 
This sandwich was to say the least, AMAZING. The flavor was perfect, with the thyme and splash of white wine giving it a more sophisticated flavor. Oh, not to mention the cheeses. Ooey, gooey goodness!

  1. Grilled cheese sandwiches are my biggest weakness, especially when using provolone or gruyere cheeses. Adding mushrooms? Total deliciousness!

    Don't you just love Pintrest? I am so hooked.

    Y'all enjoy your snow. I wish it would just flurry here. It's been very warm this winter.
