Summer Recipe: Watermelon Ice
One of my daughter's favorite summertime treats is Watermelon Ice. I don't know where I found the recipe, but once I made it they were hooked. It's quick, easy and refreshing!
It's a great way to use up watermelon that is getting a bit mushy, or maybe isn't quite as sweet as you'd like it to be.

Watermelon Ice....
1/2 c. sugar1/4 c. fruit jello...watermelon, strawberry, raspberry, etc.3/4 c. boiling water5 c. seeded, cubed watermelonIn a bowl, dissolve sugar and gelatin in boiling water; set aside. Place watermelon in a blender. Cover and puree. Stir into gelatin mixture. Pour into an ungreased pan. Cover and freeze overnight. Remove from the freezer 1 hour before serving. Spoon into paper cones or serving dishes.
