Recipe: Greek Sandwiches with Cucumber Salad

A few weeks ago, we had lunch at the home of some wonderful friends. On the menu were yummy Greek Sandwiches on Naan bread with a cucumber salad, fresh watermelon and pie for dessert. We (my family) fell in love with the wonderful sandwiches and decided they needed to become a part of our meals on a regular basis. 

Last week I made them, and was so excited to be using our grill for the first time in almost a year (see this post on my new grill parts). You will love this recipe and I'm sure it will become a favorite on your summer menu!

I served the sandwiches on naan bread, though you could use pita as well or even in a wrap. The cucumber salad could be eaten as a side, but we used it to top the sandwiches.

Absolutely Fabulous Greek/House Dressing  

1/4 c. Olive Oil
3/4 tsp. garlic powder
3/4 tsp. dried oregano
3/4 tsp. dried basil
1/2 tsp. pepper
1/2 tsp. salt
1/2 tsp. onion powder
1/2 tsp. dijon style mustard
1/3 c. red wine vinegar


Combine all ingredients and pour over salad. Let chill before serving.


Cucumber Salad


1 large cucumber (I used english)
1 bell pepper
chopped red onion (however much you want)
3-4 roma tomatoes chopped
can of olives (black or Kalamata) sliced
Feta cheese


Marinated Greek Chicken 

1 (8oz) container fat-free plain greek yogurt
1/3 c. crumbled feta cheese with basil and sun dried tomatoes 
1/2 tsp. lemon zest
2 Tbs. fresh lemon juice
2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. crushed dried rosemary
1 lb.  skinless boneless chicken (I used tenders and just used 2 per person)

Naan Bread

Hummus


Combine all ingredients and marinate chicken in it for a few hours. Take chicken out and grill until cooked through. Cut into strips, cubes, whatever tickles your fancy.

To assemble sandwiches...grill the Naan bread till warm, spread with hummus, top with chicken and cucumber salad, devour!!! It is such a fresh and light tasting meal!
