Light and Tasty Meal
The family was at soccer practice and the last few nights they've been at the church late helping set up for a youth even we are hosting this week. I knew they'd want to hurry up from soccer and head back to the church so I wanted to have something ready.
I opted for quinoa with grilled veggies and black beans. Great choice!
Quinoa: 1 c. quinoa, 1 1/2 c. water, a bouillon cube. Boil until liquid is absorbed (about 15 minutes), then remove from heat and let sit for about 5 minutes. Quinoa is a light grain and is very flavorful. It has many health benefits and can be used in a variety of ways and recipes.
Grilled Veggies: mushrooms, zucchini, yellow squash, onion, tomato, red pepper. Toss with EVOO, add italian seasoning, garlic powder, onion powder, pepper, a touch of salt. Place in grill basket and place on hot grill, cooking till crisp tender.
I also heated up some black beans to add a little more fiber and protein.
