Home Is....Using Leftovers
We often have leftovers in our home. Sometimes we just eat them "as is", sometimes they end up in my hubby's lunch, sometimes I make a new meal with them.
Some of my favorite things to use "over" again are: chicken, brown rice and veggies! We don't often have beef so I don't usually have leftover roast, etc....
How do I use these items?
Chicken: We use chicken in wraps and to make this yummy chicken salad. I've also used leftover chicken to make one of our favorite chicken casseroles and BBQ chicken Sammy's. How about throwing together Chicken soup, or Chicken Quesadillas.
Brown rice: We always use it in wraps, but I also throw it in soup or this yummy salad.
Veggies: Sometimes I'll use leftover broccoli or asparagus in a different meal the next day. I'll throw asparagus into an omelet or mix it with some rice or egg noodles. We'll serve broccoli over a baked potato.
