Recipe: Peach-Blueberry Cobbler

The other night I made a peach-blueberry cobbler. I didn't want to take the time to make a pie crust and thought cobbler sounded scrumptious. I also invited my in-laws to come over, not only to help eat the cobbler, but to play cards as well. What a fun night, well, until my darling mother in law beat us all at our favorite card game, Hand and Foot. The woman always wins. I told her she wasn't allowed to come back to my house. Of course I wasn't serious since I love her so much. But she does have a tendency to win. The cobbler was devoured and there wasn't a drop left by the end of the evening (which is wonderful....because I don't want the temptation around). Here is the recipe that I got here.
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 cups sugar, divided
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 cup milk
  • 4 cups fresh peach slices
  • 1 tablespoon lemon juice
  • Ground cinnamon or nutmeg (optional)

Preparation

Melt butter in a 13- x 9-inch baking dish.

Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).

Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired.

Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.

It was wonderful. Hubby thought it was a little sweet so I might cut the sugar next time. I also added blueberries to it because I wasn't sure if I had enough peaches. Go make it and enjoy. I served it with fresh whipping cream, but ice cream would have been divine. With Joy UNquenchable,
