Recipe: Foil Wrapped Salmon

I really miss my internet at home. Last night I was at the church and now? Now I'm sitting in the library parking lot in a neighboring town where Kat is helping with a soccer camp. None of the coffee shops have wifi and the library is closed. I did sign in with my card so I feel legit, but this is getting old fast! Last night I was talking to my dad and he gave me a yummy recipe for baked salmon. I was going to grill it but I didn't have anything to light my grill with (the ignitor is broke and all of our "lighters" are out of juice). It was so simple, fresh and really good!! In a skillet pour a little olive oil. Add to that some diced onion and minced garlic and a can of stewed tomatoes (mine were Italian seasoned). I added fresh spinach since I like that better than frozen. Cook till heated through. Remove and set aside. In the same pan adding a bit more olive oil place add a few salmon steaks, seasoning with salt, pepper, and garlic salt. Cook for one to two minutes on each side. Remove salmon from pan and place on foil. Top with a good portion of mixture. Wrap in foil and cook in a 350 degree oven for about 15-20 minutes. You could add mushrooms to this or use salsa instead. I will be grilling this next time but it was a real winner. I served it with a fresh salad, coleslaw and potato salad. I ended up with some leftover tomato/spinach mixture and do you know what we did? We ate it on triscuits!! Very yummy!! On another note, my garden is doing much better. There are several yellow squash to pick and I'm making some zucchini bread today. I think the miracle gro may be helping. My cukes look like they may produce after all. I spent some time over the weekend looking at school curriculum. I need to get on top of that, as well as post some of last years stuff on ebay. Well, off to get Kat! Have a great Monday everyone.   1. Sounds and looks delicious! I LOVE salmon. I am so sorry that you are still have computer issues. It's not fun, I know. It's great that your garden is doing better. Ours has been rather weak, but I am holding out hope for a few delights.
