Kitchen Tip Tuesday: Grilled chicken Quesadillas

Last summer on a super hot day I decided to try grilling quesadillas. I will say I was very happy with the finished product. Who says grilling has to be reserved for steak, burgers and hot dogs. I encourage you to find ways to cook a variety of things on your grill. I've also done my chimichangas on the grill. 
On that sunny and hot day we had a build your own quesadilla night. Everyone got to choose what they wanted on their tortilla. 
(our filling options: tomatoe, corn, cilantro, chicken, olives, cheese, and black beans..)
Your options are limitless as to what can be served in these. I cooked my chicken, seasoning it with chili powder, garlic powder, and cumin. I then loaded my tortillas up with chicken, beans, corn, cheese, tomatoes, cilantro and who knows what else. After loading them up, add one more tortilla on top and place on your hot grill!! Flip when ready.
(don't be afraid to load it up!!!)
I was a bit nervous about everything spilling out when I flipped it, so I wrapped them in foil. This worked, but when they were taken off, the steam softened the tortillas instead of leaving them crisp. Next time I think I'll just put foil on the grill and lay them flat right on the foil.

  2. Wow lady excellent pics. Hey I love that widget at the bottom. I am in a housecleaning frenzy type mode right now otherwise I would so nab it! I dont want to break the flow of things on the cleaning front, ya know?
