Kitchen Tip Tuesday: Recipe for Quick Lemon Poppyseed bread

I'm not always a fan of using boxed mixes. Actually, that's  not true. I love them, but I know they're not the best for you because of some of the preservatives. But.....sometimes they are handy for throwing something together. And you know what? I'm okay with that.
A friend recently sent me this recipe for lemon poppyseed bread and it was so quick and easy. Oh, and it was really, really good. I made one loaf and then about 2 doz. mini-muffins. Give it a try. I think you'll like it. It's perfect for throwing together when you have last minute company.

Ingredients:
1 box lemon cake mix
1 sm. box lemon pudding, instant
1/2 cup oil
1 c. water
4 eggs
1/4 c. poppyseeds
Mix all ingredients and bake in a 350 degree oven in 2 8 x 4 pans for 25 minutes, or until done. YUM-O

  2. Mmmm...this looks good. Another one I'll have to try. I meant to tell you already - I tried the multigrain sandwich bread. Oh YUM! I'll definitely be making it again! It is a lot of work, seeing how I don't have a stand mixer, but it is worth it! Thanks for sharing so many great recipes!
