Kitchen Tip Tuesday: Using pulp from juicer

My mother in law recently purchased a juicer. She has been saving the leftover pulp to either give to me to compost, or to make muffins. Yep! She has a recipe that incorporates the leftover pulp into muffins. I tried one the other day and they were surprisingly good, and good for you!
