Menu Plan Monday

We are on a wonderful weeklong vacation in Sunriver Oregon. We are sharing the week with friends and thus sharing some of the meals which makes things even more fun.
Saturday I made some yummy chicken and veggie stirfry. Not with frozen veggies (though I used to do that.), but with fresh veggies. It's just so much better. 
Sunday we had bean and rice burritos topped with lots of veggies. I simply took a can of refried beans and heated them up. I also bought a box of Zatarans black bean and rice mix (this is a yummy brand). I made some extra white rice because I didn't think I had enough, then I mixed it in with the boxed rice and left some plain. We cut up tomatoes, olives, onion, cheese, lettuce and mushrooms. We filled the tortillas (whole grain) with the rice beans and toppings. Talk about filling! It was yummy.
The rest of the week looks like this: 
Monday night: Spaghetti made with spaghetti squash and veggies
Tuesday night: baked potatoes with toppings.
Wednesday night: chicken and rice casserole
Thursday night: Tacos, beans and rice
Friday Night:  Meatloaf and mashed potatoes
Yummy and fun week ahead.
