Menu Plan Monday

We pretty much eat healthy in our house. At least we stay away from a lot of sodium, high fructose corn syrup and processed stuff. I would say on the scale of 1 to 10, with 1 being a terrible diet and 10 being extreme, we're about a 7. And I think I'm okay with that and yet always trying to make changes toward healthier living and eating. Right now I'm doing a version of The Biggest Loser at our church and so I'm being very conscious of portion control and sugar intake. I think I'm doing pretty good, but we'll see when I weigh in tomorrow. I'm trying to plan my menu around things that won't tempt me to over consume and also things that can be used as leftovers. I'm finding right now that trying to be budget conscious and cook healthy meals can be a bit tricky. Many "low-cost" meals consist of casseroles and pastas, which once in awhile aren't bad, but everyday of the week is just too much to consume those items. And yet we're trying to eat healthier and maintain a budget. It gets tough. I've decided I may make a pasta or casserole once a week, but then my goal would be to make a healthier version. I've bought some plain yogurt to try to replace sour cream and wheat noodles instead of plain pasta. My thoughts for this week are as follows:

Stirfry (2 times)

Potatoe soup with salad and maybe homemade rolls

Chicken soup with salad

Homemade nachos

Seasoned chicken with roasted potatoes and asparagus

Salmon with veggies and either brown rice or potatoes
