Menu Plan Monday
Just when I think fall is making it's appearance the temperatures sore to the 80's and 90's. Not exactly soup weather. I suppose I could crank the A/C and we could all bundle up and eat a nice hot bowl of soup.
Our nights and mornings are crisp and fall like, but the days have been hot!
Last weeks menu went well. I think I actually cooked a few meals. I love to cook, but with building a house, it hasn't always happened.
This weeks menu looks something like this:
Chicken Enchilada's with rice, beans and salad (this we'll have with friends. We wanted to plan an enchilada night)
Chicken Paprikash (it's supposed to get a little cooler at the end of the week..we'll see) with salad and rolls
BBQ Chicken with corn on the cob and baked potatoes
Grilled Chicken with salad and foccacia bread
Chicken and Veggie tacos with rice and beans
Grilled salmon with asparagus and rice
Veggie Stirfry (hubby wants to do this a few times)..this is when I wish I had my garden going.

Meal planning is my lifeline! We save so much money and time by creating a meal calendar each month. Josh and I actually have fun with it.
