Recipe: Summer Pasta Salad

There is nothing yummier on a hot, summer day then a pasta salad. They are so versatile and good. Because, really, you can put into them whatever you want. I am running low on food and so was trying to come up with something to have for people to eat for lunch or with dinner tonight. I had bought some ingredients for pasta salad a few weeks ago but never made it. To this pasta salad I just used what I had on hand. tomato, spinach and regular spiral pasta, carrots, red peppers, cauliflower and I threw in some kidney beans for protein. You can add broccoli, olives, cheese cubes and salami or pepperoni as well. For the dressing combine: 3/4 c. vegetable oil, 1/2 c. red wine vinegar, 1 tsp. garlic powder, 1/4 tsp. pepper, 2/3 c. grated parmesan cheese, 2 tsp. dried oregano and 1 tsp salt. Pour over pasta salad and toss to coat. Refrigerate until chilled. If you don't want to make your own dressing, just add some bottled Italian salad dressing to it. The dressing is from a recipe a friend gave me for Pizza Pasta Salad. And I believe she had pepperoni, mozzarella cheese cubes, olives, and the dressing.   4. I made a big pasta salad too this weekend. You want a nother yummy dressing recipe? Try this for pasta salad.

    Bring to boil 2 1/2 cups of sugar with 1/2 cup of vinegar. Reduce heat and keep a close eye on it for about 7 or 8 minutes until the sugar is all dissolved. Then add 2 tsp salt, 1 Tablespoon ground mustard and 2 teaspoons of gralic powder. Stir together and pour over pasta. Refrigerate salad two hours before eating.

    This dressing is wonderful. Dont expect the dressing to all soak into the pasta. It doesnt so stir it occaisonlly so everyone can get a good dose of that sweet and sour combo in the dressing.
