Recipe: Chicken Pot Pie

I've posted this recipe before, but thought I'd post some pictures as well. I've discovered something though about myself. I don't do well at cooking when I'm rushed and in a hurry. Which I was yesterday. It didn't start out that way, but it sure ended that way. I had decided in the morning that a chicken pot pie sounded yummy for dinner and had planned to make it that afternoon. Kat had dance practice at 5:30 so the plan was to have it ready by 5:00. Then I decided to just get it started earlier so it was ready to pop in the oven, when I received a phone call asking me to meet someone at the church at 4:00 (it was around 3:15 when I got the phone call) so they could buy a pool table we had....hmmm...okay, I could do that but I'd be pushing it. So I began rushing to put this pie together....only to find out I didn't have to meet the person at 4:00 after all, sooo.....I rushed through making the potpie anyways. It got done at about 4:30. Hubby was at the property, and the girls weren't hungry. I then got another phone call around that time to go up to the property and look at a car someone was wanting us to buy (a friend of ours who works for a car dealership had a Toyota Sequoia on their lot and he knew that's the car we'd love to have so he brought it up for us to look at), so I put the pie in the fridge and headed to the property and then dance practice. Got home around 7:45. I was hungry. Pulled out the pot pie, heated it up, took a bite and went "this is bland!" I had forgotten to put salt in the dough and I never tasted the filling mixture in order to adjust the seasonings to my liking. All in all it turned out good, but we needed to add some seasoning to it. I'm eating some as we speak...wait a minute, we're not speaking...I mean as I type. I am hoping next week isn't quite so nutty! I don't do well when every day seems chaotic. Today is still looking a bit crazy. I have a few hours at home and then off to grocery shop. Well enough of my rambling. Take this recipe and go make yourself a yummy pot pie. I was actually going to try and make it with drop biscuits but didn't have time to find a whole wheat drop biscuit recipe. Oh, the other thing I learned, is that I need to learn how to make pie crust. It turns out, but it isn't pretty and I know it could be better. I've yet to master that art!
Chicken Pot Pie 


Pie crust for 9" or 10" pie pan 
2 c. chopped, cooked chicken 
1 small bag frozen mixed veggies 
2 potatoes, peeled and cubed 
chopped onion (amount to your liking) 
3 Tbs. flour 
3 Tbs. butter, melted 
1/4 tsp. pepper 
1 tsp. salt 
1/4 tsp. thyme 
3/4 c. chicken broth 
3/4 c. whipping cream

Instructions: Preheat oven to 350

1. In saucepan add mixed veggies and potatoes. Cook till just tender. 
2. In another saucepan, melt butter. Add flour and stir 1 minute.
3. Add seasonings, broth and whipping cream. Cook till thickened. 
4. Add chicken, and veggies. 
5. Pour into pie crust. Top with remaining crust and cut vent holes in top. 
6. Cook on 350 till crust is browned, approximately 20-30 minutes. Let set 10 minutes before serving.

This is a really creamy and rich pot pie. The thyme gives it great flavor. You could replace milk for the whipping cream, or probably half and half. The gal who gave me the recipe actually just throws everything together without "pre" thickening the sauce or cooking the veggies slightly, which is fine, but the way I do it ensures your veggies are cooked and hot, and the sauce is thicker instead of being runny.
Chicken and veggies ready to go. I realized as I was reading the recipe that I forgot to put the potatoes in. I love the potatoes too. Added to the creamed mixture....Yum-O! At this point I really taste to see if I like the amount of seasoning. I also should have made a bit more liquid because my hubby likes it really creamy.

Served with a few leaves of lettuce, blue cheese dressing, tomato and cheese. Perfect!

  3. We had beef potpie - the night of our soccer loss.

    I had it already to go and put right into the oven.

    My fast easy topping is crescent rolls, but I do make a REAL topping too.

    Yummy! It's pure comfort food!
