Recipe and a Garage Sale
Well, in about 2 hours my garage door will open and my 3 days of garage selling will begin. Oh, I'm praying it goes well. I was up till 12:00am this morning pricing things. Normally I'm very organized, but things have just been crazy and I haven't had time so this is more of a winging it sale. I'll post on all that later.
For now, though, I wanted to get a recipe up.
I made Mrs. Jones's Citrus Soy Chicken Wings. (only I used legs instead of wings). They were so good! Here's what you need: 8 chicken drumsticks (I used these instead of wings)
1 tsp. finely chopped fresh ginger (I used ground since I didn't have fresh)
1/4 tsp. salt
cooking spray
1/2 c. Sake (rice wine)..couldn't find it so I used white wine
1/4 c. fresh orange juice
2 Tbs. sugar
2 Tbs. low sodium soy sauce
1 Tbs. fresh lemon juice
1/4 c. chopped green onions
I sprinkled chicken with salt and ginger (I would do more next time). Then heating a large nonstick skillet that has been sprayed with cooking spray, brown chicken on all sides. Add Sake or white wine, or chicken broth and next 4 ingredients (through lemon juice).
Cook 1 minute. Cover, reduce heat, and simmer until chicken is cooked through. Remove from pan; keep warm. Bring sauce to a boil and cook until it's been reduced to 1/2 c.
Return chicken to pan and coat with sauce. (I honestly think this is the first time I have ever "reduced" a sauce...I know... sad)
Top with green onions. I served it with brown rice and broccoli, though none of us ate it till later. It got done cooking and we were out the door. But we did have food later.
