Kitchen Tip Tuesday: Candied Walnuts

This morning I tried to post this, but blogger wouldn't cooperate. So better late and never. I happen to love nuts on my salads. I love (or loved) buying those yummy, flavored, crunchy almonds. But then they were just too expensive.
Yesterday...no, Sunday...I'm confused on my days. Sunday, I decided that for lunch we'd have Salad with breaded chicken tenders cut on top, cheese, hard boiled eggs and I got an inkling for candied walnuts. So off I went to surf the net for a recipe. I found one that somewhat worked. My tip, other than the recipe, is that instead of rushing to buy all those expensive salad toppings, first stop and look in your cupboard and see what you have on hand that you could easily turn into something YUM-O! The finished salad...it was soo good!
The recipe I used called for 1/2 c. walnuts and 1/4. c. sugar. It said to cook on medium till the sugar dissolve. However, mine just wouldn't dissolve so I looked at another recipe and it used water, so I just added some water to this.
It helped. I let those cook for a bit, then placed them on a foil lined baking sheet to cool.
Then added them to the salad. I refrigerated the rest and actually just ate the rest of them right out of the bag. Next time I will use the recipe that called for dissolving the sugar first in hot water, and then actually baking the nuts for awhile. But they were still really, really good and tasted great on the salad. I did use raw, fine sugar and I don't know if that makes a difference.

  1. The salad looks great, it's funny how many people are turned off of salad because what they've always had are the terrible iceburg lettuce messes with no variety or imagination to them, it really looks like you know what you're doing.
