Heart of the Matter: Tried and True Recipes~Chicken Cacciatore

I thought I'd join the Friday Meme from Heart of the Matter. It could be fun! They asked today for tried and true recipes. I want to share a crockpot recipe that I love. My mother's family is Italian and one thing my mom always made was Chicken Cacciatore. The only thing was that it took awhile to cook. I found a great way to cook it in my crockpot and have the same yummy results.
Crockpot Chicken Cacciatore

6 boneless, skinless chicken thighs 1 10 3/4 oz. can diced tomatoes 1 small can tomato paste 1 10 3/4oz. can tomato sauce 1 red or green pepper, cut in half and sliced 1/2 onion, chopped 2 garlic cloves, chopped 1 cup sliced mushrooms 1 c. chopped carrots 1-2 Zucchini, chopped 1/2 tsp. pepper 1/2 tsp. allspice (or nutmeg works) 2 bay leaves 1/2 tsp. thyme dash cayenne pepper salt to taste

Place chicken thighs in bottom of crockpot. Layer veggies on top. In a bowl, combine tomato sauce, paste, diced tomatoes and seasonings. Stir to combine. Pour over veggies and chicken and cook on low till chicken is cooked through and veggies are to your liking. Serve over rice, pasta or potatoes.

You can take out certain veggies if you like. I actually added the zucchini and carrots from the original recipe to give us more veggies in this dish. And I adjust the seasoning to my liking as well.
