Menu Plan Monday

The menu will be short this week as I'm leaving on Wednesday for a women's conference in Lynden, Washington and will be gone till Saturday. I'm sure the family will head over to my hubby's parents house for some meals. I will make them a casserole for one night that I'm gone. So, just thinking off the top of my head I think today we'll do BBQ chicken since the weather is supposed to be nice. Served with grilled potatoes (I'll include a pic and recipe later), grilled zucchini and yellow squash. Tuesday I'm thinking a veggie and ground turkey soup, with salad, and maybe we'll make some homemade rolls. If not soup then I have a great recipe for chicken veggie tacos. We'll see what everyone wants. I'll make a chicken and rice casserole and spaghetti for hubby and the girls to eat while I'm gone. These are easy meals to reheat and eat later. I'll include recipes for this later as well. The casserole is easy and yummy and usually a big hit.....and it can be made fairly low fat if you wanted.
