Menu Plan Monday
For the next two weeks we are trying to eat less meat and less carbs, and more fruits and veggies. Yesterday I made a minestrone with some barley, cut up oranges, salad, and sugar free jello. It was good. The minestrone was a bit different then I'm used to, but I liked it just fine.
Last week, despite my cold I managed to put together a few good meals with the minimal amount of food that could be found in our cupboards. A yummy potatoe soup and rolls and some elk chili with cornbread.
This weeks the menu looks like this:
Monday: Eggplant Parmesan, salad, cut up fruit
Tuesday: Stirfry veggies, brown rice, fruit
Wednesday: Cabbage rolls (minus the rice), salad, fruit
Thursday: Veggie Chili maybe served over sweet potatoes?
Friday: Leftovers
Saturday: Chicken soup
Sunday: Either leftovers, or Salmon (I have an awesome recipe that I'll include later or try and find a link.)
My youngest daughter loves pancakes, but we are trying to continually make changes in our eating, so I bought whole wheat pancake mix (much to her dismay). We did whole wheat waffles yesterday and they turned out pretty good. I also plan to do more oatmeal, muffins, smoothies, and whatever else sounds good. I'm waiting to get a recipe for these amazing raspberry muffins that my pastors wife makes. Last week we also did turkey sausage links and scrambled eggs.
I was at Costco yesterday and was informed that they will have the Vita-Mix road show in April. Whoo hoo! We are finally going to purchase one...can't wait to get it and try it.
Ive always wanted a vita ix but my husband cannot be convinced that its worth its money in spite of the fact that I have a brother who has used his for years to make wonderous things. Maybe if I start juicing regularly on my juicer I will convince him!
ReplyDeleteWe are using our Costco rebate check to buy it, so no money out of pocket. When I've seen the demos over the last few years and tasted what they make, I've been so impressed. My oldest loves to make smoothies, and I like the idea of using it to grind flour,etc.. we'll see. I'll let you know.

ReplyDeleteYou had asked where all the awards came from and I am really not sure. The ones I had were passed onto me. The <3 award has a link in the post where I wrote about it. You may have to just scan some of the other blogs with reference to the awards to find out your info, or google the title of the award. I'm sorry that I couldn't be of more help.

I don't use white flour at all...or anything enriched or processed for that matter.....and remember most fruits are carbs!! At least they are healthy ones. I lost a LOT of weight last year by cutting out white flour products, potatoes, pasta , rice and processed meats...and got quite an education is food during the process!!

Yes, Cutting out the "bad" carbs...though I do love potatoes...so probably cutting down on those. Robin, do you have any good sites for "whole" foods cooking, or sites that list "good" and "bad" carbs?
