Soft Peanut Brittle

I wanted to share a recipe for soft peanut brittle. I love, love, love, peanut brittle, but I don't like how it sticks to my teeth. I came accross this recipe a few years ago and I make it every year. This is not the original recipe (that one is packed), but I believe this is identical. So make it and enjoy.

Soft Peanut Butter Peanut Brittle

Soft Peanut Butter Peanut Brittle. A softer alternative to a traditional holiday favorite.
2 c. creamy peanut butter
1 1/2 c. light corn syrup
2 Tbs. butter
2 c. peanuts, raw or roasted
1 1/2 c. sugar
1/4 c. water plus 2 tsp. divided
1 tsp. vanilla
1 tsp. baking soda

Generously grease a marble slab or cookie sheet; set aside.

In a double boiler over hot water, place peanut butter to heat. Meanwhile, prepare syrup in a large saucepan by combining sugar, corn syrup, and 1/4 c. water; Cook over high heat to 275 degrees on a candy thermometer. Lower heat to medium, add butter, stirring until melted. Add peanuts, cook, stirring about 5 minutes until candy starts turning brown and reaches 300 degrees on the thermometer.

Remove from heat; stir in baking soda that has been dissolved in remaining 2 tsp. water. Add vanilla

Working quickly, fold in warm peanut butter, stirring gently. At once, pour candy mixture onto prepared slab; quickly spread as thin as possible. When cold, break into serving size pieces.

  5. I am thinking about giving this recipe a try. It seems like its going to make for some really nice brittle. I just have a question though that I was wondering if you could give an opinion on. I dont eat this myself, but have relatives who love peanut brittle, and so make it for them for the holidays, but one recently told me not to make it for her anymore, as her teeth cant take it anymore, and she cant afford another crown on a tooth. She absolutely loves it and the reason I started baking these treats to begin with and so I am looking for a softer, more tooth friendly alternative, that tastes just like the traditional peanut brittle but will be gentle enough that she can enjoy it without worrying about breaking another tooth. Do you think this would be a good option for her.
