Recipe: Paula Deen's Corn Salad

Here is the second recipe I promised you all yesterday. 

 I first enjoyed this recipe at a friend's house (actually the same friend who made the Texas Caviar that I posted yesterday). It is best eaten the same day unless you leave out the Frito's and just add them to each individual serving (they get soggy).

It's one of those salads that is great to take to potlucks. Kat brought it to a soccer BBQ last summer and everyone loved it.

Ingredients:

  • 2 cans whole kernel corn, drained 
  • 2 c. grated cheddar cheese
  • 1 c. mayonnaise
  • 1 c. green pepper chopped (I used red pepper instead)
  • 1/2 c. red onion, chopped
  • 1 10 1/2 oz. bag coarsely crushed Chili Cheese Frito's

Combine first 5 ingredients and chill. Right before serving add the crushed Frito's. Another very good, very quick appetizer/side dish.
