Recipe: Rhubarb Cake

Have I ever mentioned that I am messy in the kitchen? No? Well, I am. I make a mess and I can even be a bit of a klutz! Sigh.....I think I've always been this way. My dad used to call me "Grace" and I'm thinking it wasn't an endearing compliment, but a fact that I just was not graceful!! Anyways, this morning I was making a rhubarb cake...recipe following...be patient, and I had all the ingredients in the mixer bowl...it says to just combine everything and then mix. I went to turn the mixer on and realized that I hadn't plugged the thing in. I plugged it in, forgetting to turn it off first. It was on the lowest setting, but let me tell you....flour and buttermilk went flying everywhere. Sheesh...I tell ya! But I got it under control, cleaned up and in the oven. It turned out great...I had to sneak a piece just to be sure. And because I was such a klutz I didn't take time to take any pictures except the finished product and that's not even a great picture. So on to the recipe...
Rhubarb Cake
(Printable Recipe)
1 1/2 c. sugar 
2 c. flour
1/2 c. shortening or butter (softened) 
1 tsp. baking soda 
1 c. buttermilk 
1 egg 
1 tsp. vanilla
2 c. rhubarb 
1/2 c. sugar 
1 1/2 tsp. cinnamon 
 
In a mixing bowl combine first 7 ingredients. Stir in rhubarb. Pour into greased 9 x 13 pan. Sprinkle top with cinnamon and sugar. Bake at 350 for 45-55 minutes. **NOTE**I doubled this recipe to make it a thicker cake.

  1. It sounds good, Kirstin. I have never made anything with rhubarb before, so I'll have to give it a try! It's ok to be messy in the kitchen....I am too! =)

  2. I, too, am a total klutz - in the kitchen and elsewhere :) Oh well, I normally don't have too much of a problem laughing at myself.

    from the note on fb: yes - I was terrified. I didn't say in the note that my hubby wasn't even home! This person has been up once before at a similar time and we didn't even know him at all then. My hubby is going to talk to him about it.
