Slow Cooker Thursday: Pulled Chicken Sammys
My friend Sandra hosts Slow Cooker Thursday. I admit, I don't use my slow cooker near enough...unfortunately, but I love all the recipes I find here. I just love Sandra's blogs! She's an amazing woman whom I would love to get to know in person.
My recipe is super duper easy. We don't really eat pork, so I make BBQ'd Pulled Chicken Sandwiches. Simply put several chicken breasts and/or thighs in the bottom of your crockpot. Then top with 2 bottles of BBQ sauce, chopped onion and even some chopped green pepper. Let it cook on low all day, or on high for less time. When chicken is done take two forks and shred each piece. Yummy! I often times will make my own BBQ sauce because it just tastes better.
For that, saute some onion in a saucepan. Add whatever amounts of the following: ketchup, mustard, brown sugar, mustard, a touch of vinegar, Worcestershire sauce, honey and whatever else you want. I've added liquid smoke as well. There's nothing like homemade sauce. It's all put together according to your taste, and it's healthier sometimes than the bottled stuff.
I like cooking barbecue in the slow cooker especially chicken because it doesn't burn the outside before the inside is done. I'll have to give this a try soon.
ReplyDeleteWE love any type of pulled meat....pork, chicken, beef. Sounds like bbq style is a theme this week...were having bbq country style pork ribs.
