Recipe: Fruit Pizza

Kat was in charge of snacks for our youth group last night and so she decided we'd all have fruit salad, crackers and cheese and fruit pizza. We were in charge of the fruit pizza! This is so yummy and the fun thing is that you can really put whatever fruit on it that you want. We used a combination of strawberries, blueberries, Kiwi, pineapple, mandarin oranges, grapes, and...I think that's it. The pizza was a big hit. It can be a bit sweet and so you could leave off the glaze at the end and still be just fine. I doubled the recipe because we made two larger ones. The recipe I'm giving you will make a large pizza size fruit pizza. The only thing I did was make the crust. Kat did all the rest herself.
Fruit Pizza

Crust: 3/4 c. butter, softened
1/2 c. powdered sugar
1 1/2 c. flour
Filling: 1 pkg. vanilla chips (melt on low heat and cool)
1/4 c. whipping cream
1 pkg. cream cheese softened
Glaze: 1/2 c. pineapple juice
1/4 c. sugar
1 Tbs. Cornstarch
1/2 tsp. lemon juice
Combine all the crust ingredients. I used my mixer to mix it to a crumbly stage. This will really be crumbly so just dump it on a buttered baking sheet and then press into pan. It will be almost like a shortbread crust. Bake at 300 degrees for 25-28 minutes. Let cool.
In a pan, melt the chocolate chips on low heat, stirring constantly. Remove from heat and let cool. In a large bowl combine cream cheese, cooled melted white chocolate and whipping cream. Mix well.
Place onto cooled crust. And spread.
Lookin good.
Combine all glaze ingredients in a saucepan. Bring to a boil and cook until thickened. Remove from heat and cool.
Place all your fruit on top of the filling
Drizzle with the glaze. Or leave the glaze off if you want.

  1. I love fruit pizza! :) My my used to always make it for my birthday. Since my birthday is near Christmas, nobody really wanted more cake. So, she would make fruit pizza, and we would have a breakfast-time celebration! :) I've never heard of putting vanilla chips in it, though. :)
