Recipe: Raspberry Crumble Muffins
1/2 C. butter
1/2 c. sugar
1 egg
1/2 c. milk
1 tsp. vanilla
1/2 c. sour cream
2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
Topping:
1/2 c. flour 1/2 c. rolled oats 1/3 c. sugar 1/2 tsp. cinnamon 6 Tbs. butterBeat butter, sugar, until fluffy. Add egg. Combine all dry ingredients and add to creamed ingredients. Alternate milk and sour cream with dry ingredients. Combine all topping ingredients. Cut in butter till crumbly. Place in muffin cups and sprinkle with topping. Bake at 400 until done

This recipe came from my pastors wife. She normally bakes them in large muffin pans, but we were making them to take on our trip to central Oregon last weekend and wanted enough to feed the team. They were sooo good. She got several compliments on them, but the sad thing was that most were surprised she baked them. I guess they just don't expect young girls to know how to cook. And that is sad. I am determined that my girls will know how to take care of themselves and their families when they are no longer under our roof. Sure they'll make mistakes, maybe even ruin some things, but how else will they learn.
She made these last week and used blueberries, so you could definitely switch up the berries, possibly even use apples. You could even switch

On the homefront, Kat left early this morning to go to California with a friend. She and this girl have been friends since they were 2 and 4...she lived across the street from us and they always played together. A few years ago she moved to another town and they only saw each other a few times a year, but it's one of those friendships that just lasts, and they pick up where they left off. This girl just graduated from the 8th grade and her dad and stepmom wanted to take her to Six Flags for a gift, and our daughter is the only friend they'll take anywhere with them (that's a nice compliment). So we dropped her off last night since they were pulling out at 4:00 this morning.
She was excited but a little nervous. She's such a home body and we/she have/has been gone a lot the last several weeks and that is always a bit hard for her. But I know once they get going she'll be fine and have a blast. So it is just me, hubby and Nan until Sunday. Nan misses her sis already. She slept on our floor last night. We rented some videos last night and watched one while we ate popcorn. Today we'll do school, work at property and do some strawberries (just slicing for smoothies this year, no jam), then go to youth group. Tomorrow or Friday we'll grocery shop and put another coat of paint on bathroom ceilings.
We need to make decisions on some paint this week. This weekend is also our towns celebration weekend, so there'll be fireworks, carnival rides and vendors. The weather should be decent so we'll probably hit that a bit.

Those muffins look delicious!! I wonder how they would taste with blueberries instead of raspberries?!! I have blueberries on hand and no raspberries. :)
