Recipe: Easiest Peanut Butter Fudge
I decided I better share this recipe because we made it the other day and I can't keep my fingers out of it. I have an extreme weakness to anything peanut butter. Nan asked me last week if we could make peanut butter fudge and we just haven't had the time. Finally on Monday it worked out. This is easy and quick and really, really good.
1/2 c. butter
2 1/4 c. brown sugar
1/2 c. milk
3/4 c. peanut butter
1 tsp. vanilla extract
3 1/2 c. powdered sugar
Melt butter in a medium saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes. Stirring frequently. Remove from heat. Stir in peanut butter and vanilla. Pour over powdered sugar in a large mixing bowl. Beat until smooth; pour into an 8 X 8 inch dish. Chill until firm and cut into squares.
**Note: I line the pan with foil so that when it is firm I can lift it out and cut it more easily.**
