Veggie Chili Recipe

Old Post:Yesterday I made veggie chili. It turned out good, though I will admit, I do love the meat. But thought I'd share the recipe. I also included pictures from start to finish. I didn't have a recipe so I just added things as I went.

Update: I've made Veggie Chili several times since this original post 3 years ago. We've all grown to love it. Lately I've been making it without the tomato paste, just petite diced tomatoes and maybe some sauce if necessary. The last time I made it, I added millet which was a great hit, as well as experimenting with a variety of beans.


Veggie Chili
3 Tbs. or so of EVOO
1/4 c. chopped onion
1/2 c. chopped carrots
3 stalks celery chopped
1/2 green pepper, chopped
1 small yellow squash, chopped
1 small zucchini chopped
4 roma tomatoes, chopped
1 can mushrooms, or fresh, sliced
1 can each Kidney beans, white beans, black beans
1/4 c. cous cous
1 can tomatoe sauce
1 can tomatoe paste
water to thin
seasonings: chili seasoning, garlic powder, pepper, cumin, or package chili seasoning
In a pan add EVOO and heat. Add onion, carrots, celery, and green pepper. Saute for about 5 minutes. Add remaining veggies and cook for another 5 or so minutes. Add beans, couscous, and remaining ingredients. Add seasonings to taste. Cook till heated through and veggies are to desired tenderness.

The end result...I just have to have my chili with cheese and sour cream (I've mostly switched to plain greek yogurt instead of sour cream)....if I had some homeade tortilla chips, that would have been yummy as well.

    I think my daughters think I'm nuts now, taking pictures of food. I've even taken some of them making it with me. The other day we made eggplant parmesan.
